Abstract:
To investigate the effects of re-drying curve patterns on the quality of upper-position tobacco leaves and achieve quality improvement, upper-position tobacco leaves were used as experimental materials in this study. Six re-drying curve patterns, namely uphill, downhill, stable, Z-shaped, stepped and arc-shaped curves, were set up. The variation rules of tobacco leaf quality under different curve patterns were analyzed. Further experiments with five total temperature gradients ranging from 396 ℃ to 436 ℃ were carried out under the preferred downhill pattern. The optimal redrying process parameters were selected by combining sensory evaluation and routine chemical component detection. The results showed that: ① Tobacco leaves treated with the downhill re-drying curve achieved the best comprehensive sensory quality; ② At a total temperature of 416 ℃, upper-position tobacco leaves exhibited outstanding aroma quality and aroma quantity; ③ Production verification demonstrated that the redrying scheme adopting the downhill re-drying curve combined with the optimal process parameters outperformed the original production process. It can significantly improve sensory indicators such as aroma quality and aroma quantity of tobacco leaves, enhance the quality and usability of upper-position tobacco leaves, and provide references for the optimization of dedicated redrying processes for upper-position tobacco leaves.
