Abstract:
The germplasm of jaboticaba are rich. Its fruits contain rich amount of anthocyanin and phenolic compound which have some functions, including high anti-oxidation, and prevention of chronic diseases, such as, diabetes and hyperlipidemia. There are diversified products after deep-processing. This paper reviewed research progress in, bioactive substance and its storage and processing of Jaboticaba, some suggestions were also proposed for further production and science research development of jaboticaba.
