Abstract:
The variation of water content, drying rate, rehydration, peroxide value and texture of
Mytilus edulis under different drying methods was studied and compared. Drying experiments of
Mytilus edulis were carried out in laboratory by hot air drying, natural air drying, cold air drying and freeze drying. The results showed that hot air drying at was faster than cold air drying, natural air drying. The peroxide value of natural air-drying was higher than the hot airdrying, cold air drying when the drying was completed. The rehydration value of freeze-drying was the best, followed by cold air drying. The texture of cold air drying was the best, while freeze-drying was the worst. At the same time, the cost of freeze-drying was high. So it is concluded that cold air drying was a better drying method for
Mytilus edulis, which with the advantages of easy control of drying process, good quality and suitable for mass production.
