从全国会议看食品生物技术研究动态——第一届全国食品生物技术大会述评

    Research Trends of Food Biotechnology from the Perspective of National Conference-Review of the First National Conference on Food Biotechnology

    • 摘要: 食品生物技术作为生物技术的重要组成部分,是生物技术在食品原料生产、加工和制造中应用的一个重要学科。食品生物技术作为目前食品产业领域最具发展前景的前沿核心技术之一,其对于有效改变我国食品产业经济增长方式和实现食品产业的可持续发展具有重要意义。通过对第一届全国食品生物技术大会进行总结与述评,对会议涉及的“食品益生菌及其应用”“第二届糖酶研讨会”“食品微生物、发酵与酿造”“食品贮藏与保鲜加工”“食品营养与生物技术”及“食品安全与生物技术”等主题的最新进展做了简要概述,对今后食品生物技术的研究方向进行了展望,以期为食品生物技术研究提供参考。

       

      Abstract: As an important part of biotechnology, food biotechnology is an important subject in the application of biotechnology in raw-food material production, processing and manufacturing. As one of the most promising frontier technologies in the field of food industry, food biotechnology is of great significance to effectively change the economic growth mode of China's food industry and realize the sustainable development of the food industry. By summarizing and reviewing the first national conference on food biotechnology, a brief overview was given on the latest progress in the topics of "food probiotics and their applications" "the second carbohydrase seminar" "food microbiology, fermentation and brewing" "food storage and preservation processing" "food nutrition and biotechnology" and "food safety and biotechnology", and the future research direction of food biotechnology was also prospected in order to provide reference for the research of food biotechnology.
