Abstract:
In order to study the relationship between the nutritional value of two kinds of seaweed and its mineral elements, and also provide reference for people's healthy and reasonable diet and the reasonable consumption of kelp and laver according to their own lack of mineral elements, the contents of Mg, Ca, Mn, Fe, Cu, Zn and Se in kelp and laver were simultaneously determined by the microwave digestion combined with Inductively Coupled Plasma Mass Spectrometry (ICP-MS). The results showed that the nutrient reference value (NRV) of the 7 kinds of mineral elements in kelp was respectively 295%, 130%, 90%, 306%, 20%, 17% and 16%, and the nutrient reference value (NRV) of the 7 kinds of mineral elements in laver was respectively 185%, 37%, 149%, 303%, 118%, 29% and 34%. The results showed that kelp and laver were rich in the essential mineral nutrients such as Mg, Ca, Mn, Fe, Cu, Zn, and Se, which had high edible value and health value.
