Abstract:
The deep processing of tea leaves is an important way to improve the utilization rate of tea leaves and the benefit of tea industry. The development of the terminal products is an important part of the deep processing of tea leaves. It has become a new trend in the food consumption market to combine the tea leaves and baked food to develop the baked tea food. In this paper, the raw material formula and processing technology of the main baked tea food were reviewed, including the tea bread, tea cake, tea biscuit and tea mooncake, etc., and the antioxidant and bacteriostatic functions of the baked tea food were summarized. Finally, several research directions of the baked tea food in the future were proposed.
