Abstract:
In order to optimize the best technological conditions for the sterilization of abalone, the ozone water was used for the sterilization treatment, and the effects of the solid-liquid ratio, ozone water concentration, sterilization time and temperature on the total number of colonies were studied by using the single factor test. The results showed that when the ratio of solid to liquid was 1:7-1:9, the concentration of ozone water was 2.0-3.0 mg·L
-1, the sterilization time was 7-9 min and the temperature of ozone water was 70-15℃, the optimal microbial level of abalone could be maintained by the sterilization of ozone water. Based on the results of single factor study, the optimal technological conditions were determined by using the response surface optimization method. The optimal technological conditions for the sterilization of abalone by ozone water were obtained as follows:the ratio of solid to liquid was 1:7, the concentration of ozone water was 2 mg·L
-1, the sterilization time was 7 min, the temperature of ozone water was 9℃, which provided a theoretical basis for the further optimization of ozone water sterilization technology for abalone.
