1) was a kind of harmful natural secondary metabolite produced by Aspergillus flavus and Aspergillus parasiticus, which had teratogenic, carcinogenic and mutagenic effects on humans and animals. It was easy to cause pollution in the process of food production, processing, transportation and storage, especially in the hot and humid areas. Therefore, the detoxification of AFB
1 in food has become the focus of food safety. In this paper, the three aspects of physical, chemical and biological detoxification technologies were summarized, and the advantages and disadvantages of each detoxification technology were discussed. Furthermore, the development trend and challenges of detoxification technology in the future were prospected, in order to provide reference for the detoxification of AFB
1 in the future.
