Abstract:
In order to study the effect of the new composite emulsion on the storage quality of mango, zein/pullulan polysaccharide emulsion loaded with 0, 1% and 2% (v/v) essential oil of
Melaleuca alternifolia was prepared in this study, and the mangoes were coated with a film then stored at 20℃ and at 65% RH, and the indexes were measured regularly. The results showed that the three composite emulsion coating treatments could all slow down the increase of weight loss rate of mango and maintain a higher content of Vc in the pulp, but had little effect on the content of TA and TSS in the pulp. The composite emulsion loaded with the essential oil of
Melaleuca alternifolia could also effectively inhibit the respiration of mango fruit, delay the degradation of chlorophyll and the increase of carotenoid content in the peel. Among them, the treatment of zein/pullulan polysaccharide emulsion loaded with 1% essential oil of
Melaleuca alternifolia had a better effect on delaying the degradation of chlorophyll, slowing down the increase of weight loss rate and maintaining the content of Vc. In conclusion, the zein/pullulan polysaccharide emulsion loaded with 1% essential oil of
Melaleuca alternifolia was more conducive to maintaining the storage quality of mango.
