黔东南州6种黄精营养成分特征分析

    A Comparative Study on the Nutritional Characteristics of Six Species of Polygonatum spp. in Qiandongnan Prefecture

    • 摘要: 系统分析黔东南州6种黄精(细叶黄精、多花黄精、滇黄精、川黄精、点花黄精和卷叶黄精)的主要营养成分,为该区域黄精种质资源评价与开发利用提供科学依据。采用国家标准方法测定水分、蛋白质、粗灰分、维生素C、还原糖、粗脂肪等基本营养成分,并利用氨基酸分析仪测定16种氨基酸组成和含量。结果表明:黔东南州6种黄精物种的营养成分存在显著差异。其中,滇黄精蛋白质含量最高(14.91 g·hg−1),氨基酸总量达10.07 g·hg−1,其必需氨基酸组成符合理想蛋白模式;多花黄精和川黄精还原糖含量较高(分别为7.27和6.84 g·hg−1);细叶黄精在维生素C(3.16 mg·hg−1)和粗灰分(6.91 g·hg−1)含量上表现突出。所有黄精物种均富含风味氨基酸(占总氨基酸45.2%~49.8%),且氨基酸组成均衡。黔东南州不同黄精物种具有独特的营养成分特征,这种营养成分的化学多样性为黄精种质鉴定、品质评价及差异化利用提供了重要依据。

       

      Abstract: To systematically analyze the main nutritional components of six Polygonatum species, including P. filipes, P. cyrtonema, P. kingianum var. grandifolium, P. kingianum Coll.et Hemsl, P. punctatum, and P. cirrhifolium in Qiandongnan Prefecture, to provide a scientific basis for evaluating and utilizing Polygonatum germplasm resources. National standard methods were used to determine basic nutritional components including moisture, protein, crude ash, vitamin C, reducing sugars, and crude fat. An amino acid analyzer was employed to determine the composition and content of 16 amino acids. The results indicated that there were significant differences in the nutritional components among the six species of Polygonatum germplasms: P. kingianum Coll.et Hemsl showed the highest protein content(14.91 g·hg−1)and total amino acids(10.07 g·hg−1), with its essential amino acid pattern meeting the ideal protein standard. P. cyrtonema and P. kingianum var. grandifolium contained higher levels of reducing sugars(7.27 g·hg−1 and 6.84 g·hg−1, respectively). P. filipes exhibited superior performance in vitamin C(3.16 mg·hg−1)and crude ash(6.91 g·hg−1)contents. All germplasms were rich in flavor amino acids(45.2%-49.8% of total amino acids)and showed balanced amino acid composition. Different Polygonatum germplasms in Qiandongnan Prefecture possess distinct nutritional characteristics. The chemical diversity in their nutritional composition provides crucial information for germplasm identification, quality assessment, and differentiated utilization of Polygonatum resources.
