干燥方式对八月瓜干燥特性、品质及抗氧化物质含量的影响

    Effects of drying methods on drying characteristics, quality and antioxidant content substances of Akebia Trifoliata

    • 摘要: 为干制八月瓜的生产工艺开发提供数据参考。以八月瓜为研究对象,对比分析热泵干燥(HPD)、微波真空干燥(MVD)以及热泵-微波真空干燥(HPD-MVD)3种方式对八月瓜干燥特性、干燥品质与抗氧化物质含量的影响。结果表明:HPD、MVD、HPD-MVD达到干燥终点的时间分别为330、24、102 min,其中HPD-MVD有效水分扩散系数(Deff=1.09×10−6)最高。干燥动力学拟合结果显示,Page模型对HPD与MVD的拟合效果最优(Adj.R2 > 0.99),而HPD-MVD与Wang and Singh模型拟合程度最高(Adj.R2=0.965)。在品质方面,经HPD-MVD处理的八月瓜色泽鲜亮,其L*值最高,a*、b*值最低,复水性优于MVD,且总糖、粗蛋白、总氨基酸及多数矿物质元素(Fe、Cu、Ca等)的含量最高。在抗氧化物质方面,HPD-MVD八月瓜的总酚与总黄酮含量较HPD分别提高83.3%和43.7%。综上,HPD-MVD可显著提升八月瓜的干燥效率,同时更好地保留产品品质。

       

      Abstract: Providing a theoretical basis for the development of production processes for dried Akebia Trifoliata. Taking Akebia trifoliata as the research object to comparatively analyze the effects of three drying methods, heat pump drying(HPD), microwave vacuum drying(MVD), and heat pump-microwave vacuum combined drying(HPD-MVD)on the drying characteristics, drying quality, and antioxidant substance content of Akebia Trifoliata. The results show that the time for HPD, MVD, and HPD-MVD to reach the drying end point is 330, 24, 102 min respectively, among which HPD-MVD has the highest effective moisture diffusion coefficient(Deff=1.09×10−6). The drying kinetics fitting results indicated that the Page model provided the best fit for the HPD and MVD groups(Adj.R2>0.99), while the HPD-MVD group showed the highest degree of fit with the Wang and Singh model(Adj.R2=0.965). In terms of quality, the HPD-MVD group exhibited a bright color with the highest L* value and the lowest a* and b* values, superior rehydration properties compared to the MVD group, and the highest contents of total sugars, crude protein, total amino acids, and most mineral elements(Fe, Cu, Ca etc.). Regarding antioxidant substances, the total phenolic and total flavonoid contents of the HPD-MVD group were increased by 83.3% and 43.7% respectively, compared to the HPD group. In summary, HPD-MVD can significantly improve the drying efficiency of Akebia Trifoliata while bettering the quality of the dried product.
