    无土栽培番茄营养品质及安全品质分析与评价

    Analysis and evaluation on nutritional and safety quality of tomato under soilless culture condition

    • 摘要: 对54个国内外番茄品种(系)进行无土栽培,对其营养成分及不良品质进行测定与分析,并采用优良品质与不良品质的综合指标法进行综合评价,结果表明:无土栽培的番茄,其主要营养成分平均值分别为抗坏血酸369.60 mg/kg、番茄红素54.92 mg/kg、可溶性固形物4.27%、总糖4.66%、总酸0.48%,基本处于前人研究的上限或高于上限;硝酸盐含量30.15 mg/kg、亚硝酸盐含量1.08 μg/g,均明显低于国家无公害蔬菜安全标准值,其中T2014-6综合评价得分最高。

       

      Abstract: 54 domestic and foreign tomato varieties were cultured under soilless condition, their nutritional composition and quality were determined and analyzed, and a comprehensive index method was adopted to comprehensively evaluate the good quality and poor quality of the samples. The results showed that the nutrient compositions of soilless-cultured tomato were respectively ascorbic acid 36960 mg/kg, lycopene 5492 mg/kg, soluble solids 427%, total sugar466% and total acid 048%, which basically located in the upper limit or upper limit of the previous research. The content of nitrate was 3015 mg/kg and nitrite content was 108 μg/g, which was significantly lower than the national standard for pollution-free vegetables. T2014-6 has the highest comprehensive score.
