    嘉宝果酒抗氧化活性研究

    Antioxidation activity of Jaboticaba wine

    • 摘要: 采用分光光度法测定嘉宝果酒和两种不同品牌的市售葡萄酒清除DPPH自由基的能力,并分析其清除DPPH自由基的能力随开封后时间的变化情况,结果表明:嘉宝果酒清除DPPH自由基的能力极显著高于市售的两种葡萄酒;随开封天数的增加,嘉宝果酒和两种不同品牌的市售葡萄酒清除DPPH自由基的能力较为稳定。

       

      Abstract: DPPH free radical scavenging capacity of Jaboticaba wine and two different brands of commercial grape wine were comparatively detected by spectrophotometry, and its dynamic changes with time after unsealing were analyzed, The results showed that the ability of Jaboticaba wine to scavenge DPPH radical was significantly higher than that of other two grape wines. With the time prolonged after opening, the DPPH radical scavenging ability of the above tree wines still maintained stable.
