    • 摘要: 琼脂作为三大海藻胶之一,广泛用于食品、生物、医药、日化等行业。经琼脂加工得到的产品,如琼脂糖、琼胶寡糖等,也具有非常高的应用价值。对琼脂的提取工艺及深加工研究进展进行综述,阐述了琼脂主要提取工艺高温高压法、碱法提取工艺、酶法辅助提取工艺的优缺点,分析琼脂深加工的主要应用范围,并展望琼脂提取工艺及深加工研究发展方向,旨在为琼脂在各领域的进一步应用提供参考。

       

      Abstract: As one of the three major alginates, agar is widely used in food, biology, medicine, daily chemical and other industries. The products processed by agar, such as agarose, agar oligosaccharide, etc., also have very high application value. In this paper, the research progress in agar extraction technology and deep processing were reviewed. The advantages and disadvantages of agar extraction technologies of agar, such as high temperature and pressure method, alkaline extraction technology, and enzymatic assisted extraction technology were described, and the main application scope of agar deep processing was analyzed, and the development direction of agar extraction technology and deep processing were forecasted, in order to provide reference for the further application of agar in various fields.
