    高色价红曲米液态制种的培养条件优化

    Optimization of Culture Conditions for Liquid Seed Production of Red Yeast Rice with High Color Value

    • 摘要: 为进一步研究液态制种的培养条件对高色价红曲米的影响,提高液态种子液中红曲霉菌丝体数量和质量,更好地缩短发酵周期,促进高品质红曲米规模化大生产,对液态制种过程中的培养周期、培养温度、接种量、培养基起始pH值和装液量等主要培养条件进行优化。试验结果表明:红曲霉液态制种的最适培养条件为液态制种培养基的起始pH 5.5,接种量6%,培养温度35℃,培养周期24 h。经优化红曲霉的液态制种工艺,红曲米色价达6 000~6 200 u·g-1,发酵周期10~12 d,产品得率达35%~38%。

       

      Abstract: In order to further research the effects of the culture conditions of liquid seed production on red yeast rice with high color value, improve the quantity and quality of monascus mycelium in liquid seed solution, shorten the fermentation period and promote the large-scale production of high-quality red yeast rice, the main culture conditions such as culture cycle, culture temperature, inoculum size, initial pH value of culture medium and loaded liquid were optimized. The results showed that the optimal culture conditions for liquid seed production of monascus were the initial pH of liquid seed production medium of 5.5, inoculum size of 6%, culture temperature at 35℃ and culture cycle of 24 h. After optimizing the liquid seed production process of monascus, the color value of red yeast rice was up to 6 000-6 200 u·g-1, the fermentation period was 10-12 d, and the production yield was up to 35%-38%.
