    黄曲霉毒素B1脱毒技术的研究进展

    Research Progress on the Detoxification Technology of Aflatoxin B1

    • 摘要: 黄曲霉毒素B1(Aflatoxin B1,AFB1)主要是由黄曲霉Aspergillus flavus和寄生曲霉Aspergillus parasiticus产生的一类有害的天然次生代谢物,对人和动物具有致畸、致癌、致突变作用。在食品生产、加工、运输、存贮过程中极易造成污染,尤其是在气候湿热的地区。因此,食品中AFB1的脱毒已成为食品安全的重点攻克对象。通过对物理、化学以及生物脱毒技术等3个方面进行概述,并讨论各脱毒技术的优缺点,进一步对未来脱毒技术的发展趋势和面临的挑战进行展望,以期为今后AFB1的脱毒提供参考。

       

      Abstract: Aflatoxin B1 (AFB1) was a kind of harmful natural secondary metabolite produced by Aspergillus flavus and Aspergillus parasiticus, which had teratogenic, carcinogenic and mutagenic effects on humans and animals. It was easy to cause pollution in the process of food production, processing, transportation and storage, especially in the hot and humid areas. Therefore, the detoxification of AFB1 in food has become the focus of food safety. In this paper, the three aspects of physical, chemical and biological detoxification technologies were summarized, and the advantages and disadvantages of each detoxification technology were discussed. Furthermore, the development trend and challenges of detoxification technology in the future were prospected, in order to provide reference for the detoxification of AFB1 in the future.
