    Study on volatile components of xanthan gum by solid phase microextraction combined with GC-MS

    • The volatile components of xanthan gum were collected by using the technology of HS-SPME, and the volatile components were identified by GC-MS technique. Results showed that the main volatile components in xanthan gum have 8 kinds, i.e. 2, 6-dimethyl undecane, 4, 8-dimethyl undecane and 1-methyl naphthalene, 2,6,10-2-propyl methyl dodecane, myristyl sulfurous acid ester, tridecane, tetradecyl and 10-methyl eicosane respectively, and their content accounted for 16.7002%.
