Effects of Different Harvest Time and Drying Methods on Flavonoids Content of Okra

    • In order to compare the effects of different harvesting periods and drying methods on the content of flavonoids in okra flower, the method of water bath ultrasonic assisted extraction and Na2NO2-Al(NO3)3 color-developing were used to determine its contents at different harvesting time. The results showed that the content of flavonoids in okra flower was affected in some distance by different harvest time and drying methods, and the content of flavonoids in okra flowers was the highest (2.51%) when it was harvested at flowering stage and dried at 80℃, and its color was the best, which was beneficial to the further processing and utilization of okra flower.
