Detection and Analysis on the Content of Nutritional Components, Heavy Metal and Pesticide Residues in Tremella Stalk

Abstract
Tremella stalk is a kind of fungi residues in Tremella processing. In order to promote the rational utilization of tremella stalk, the content of the physical and chemical compositions, mineral elements, heavy metals and some pesticide residues in the tremella stalk were determined. The results showed that there were more nutrients such as crude protein, total sugar and so on in the tremella stalk. The content of crude protein was between 4.86%-5.69%, and the content of total sugar was between 42.3%-53.7%. Meanwhile, the content of mineral elements in the dried tremella stalk was very rich. The potassium content was 4 445.43-5 375.69 mg·hg-1, the calcium content was 351.89-451.76 mg·kg-1, the iron content was 22.79-69.31 mg·kg-1, the zinc content was 120.00-225.21 mg·kg-1, the copper content was 6.63-10.41 mg·kg-1, and the manganese content was 7.90-9.96 mg·kg-1. At the same time, the content of pollutants and pesticide residues in the tremella stalk were lower than the limit requirements on the contaminants and pesticides of dried edible fungi in the relevant national standards.
