Study on the Heat Pump Drying Characteristics of Hypsizygus marmoreus and Its Mathematical Model

    • In order to preliminarily explore the change rule of heat pump drying process of Hypsizygus marmoreus, the effects of different wind temperature, wind speed and loading capacity on the drying quality of Hypsizygus marmoreus were studied to obtain the heat pump drying characteristic curve of Hypsizygus marmoreus. Then, the heat pump drying kinetic model of Hypsizygus marmoreus was established by using the software fitting. The results showed that the drying process was mainly composed of falling rate period and constant rate period. With the increase of wind temperature and wind speed, the drying time was shortened; while with the increase of loading capacity, the drying time was prolonged. Compared with the traditional hot air drying, the use of heat pump drying Hypsizygus marmoreus had lower shrinkage rate, greater rehydration rate, and better sensory quality. The Page model was suitable for describing the heat pump drying process of Hypsizygus marmoreus. The results showed that the heat pump drying time of Hypsizygus marmoreus was negatively correlated with the wind temperature and wind speed, and positively correlated with the loading capacity. The heat pump drying kinetic model of Hypsizygus marmoreus conformed to the Page equation.
