Optimization of Formaldehyde Removal Process Conditions for Sthenoteuthis oualaniensis by Using Orthogonal Experimental Design

    • Sthenoteuthis oualaniensis was an important aquatic resource, and its untreated samples often had higher natural formaldehyde content. In order to effectively reduce the content of formaldehyde, the orthogonal experiment was designed to optimize the four factors, including the pH value, temperature, time for soaking and scalding and the scavenger. The optimal process conditions were as follows: the pH of soaking and scalding was 9.0, the temperature of soaking and scalding was 80℃, the time of soaking and scalding was 90 min, and 0.02% tea polyphenols +0.1% cysteine were used as the formaldehyde scavenger. No residual formaldehyde content was detected in Sthenoteuthis oualaniensis products after the treatment of this process.
