    Analysis and Comparison of Muscle Quality in Deep Sea Aquaculture of Larimichthys croceas

    • In order to investigate the quality difference of large yellow croaker(L. croceas)cultured in two far-reaching Marine culture platforms, this study took L. croceas cultured in Dinghaiwan No. 2(DH-2)and Mintou No. 1(MT-1)as the object. The conventional nutrients, amino acids and fatty acids of muscle tissue of L. croceas were determined by national standard biochemical analysis method. The results showed that the conventional nutrient composition, amino acid and fatty acid composition of the two kinds of cultured L. croceastissues were consistent, but there were obvious differences in content. Except crude fat, the content of other components in DH-2 was higher than that in MT-1. A total of 16 kinds of amino acids and 24 kinds of fatty acids were detected in the muscle tissue of the two kinds of L. croceas. The content of glutamic acid(Glu)was the highest in the amino acid composition, and the content of palmitic acid(C16∶0)and oleic acid(C18∶1)was the highest in the fatty acid composition. DHA and EPA contents in DH-2 were higher than those in MT-1 group. According to the evaluation criteria of AAS and CS, the first limiting amino acid for both DH-2 and MT-1 groups is valine; The Essential Amino Acid Index(EAAI)was 89.55 and 94.13. Based on the above results and the relevant evaluation indicators advocated by FAO and WHO, the DH-2 is relatively better in terms of nutrition, taste, and other aspects. This paper can provide technical reference for the improvement of the high-quality processing of large yellow croaker in deep-sea aquaculture in the future.
